Roaches are named on the specialty list, and they are the pest where the gap between what people see and what is actually there is widest. Cockroaches are nocturnal and thigmotactic, which is a technical way of saying they want to be in a tight dark space with surfaces touching them on several sides. That is where the population lives: inside the void behind a dishwasher, in the motor housing of a refrigerator, under a sink cabinet, in the gap behind a backsplash, inside hollow door frames, in floor drains and in wall cavities. The insects crossing a kitchen floor at night are a small and unrepresentative sample. This is why over-the-counter treatment so reliably fails and why the problem comes back a fortnight later. Spraying visible surfaces kills the individuals that walk across them and does almost nothing to a population breeding in a void six feet away. Worse, the wrong product in the wrong place scatters them and spreads the infestation further into the building. The job is inspection first: working out where the harbourage actually is, which usually means opening up the places people do not look, then treating those sites specifically. Restaurants and commercial kitchens get particular attention because the same warmth and moisture that make them work make them ideal.
